Pie Cherries and Cherry Cobbler

Pie Cherries, Robins and Cherry Cobbler

This year my 50 year old cherry tree decided to finally produce enough              cherries for both the birds and me!

These cherries are perfect for cooking.  Juicy, not too sweet and just sour enough to wake up the mouth.

After some picking and tasting and picking some more, I decided I needed to either make a pie or a cobbler.  The cobbler won out.  I was more in the mood for a rich buttery topping than a flaky crust.

So, in honor of my vintage tree, I used a recipe my mom gave me, and well, when it comes right down to cobblers, this one is the absolute best for pie cherries - especially fresh picked pie cherries.

After about an hour of picking these beauties and feeling just a bit guilty about taking away some of the Robins' next meals, I headed into the kitchen to wash, pit and bake these cherries into a cobbler.

The recipe is simple!
  • 3/4 C Water
  • 1/2 C Sugar
  • 1 C Flour
  • 2 tsp. Baking Powder
  • Pinch of Salt
  • 3/4  C Sugar
  • 1/2 C Butter - melted
  • 3/4 C Milk
  • 1/2 tsp. Almond Extract
  • 3 C Pie Cherries
- Preheat oven to 350 Degrees; Grease a 2 quart baking dish.
- Bring the 3/4 cup water and 1/2 cup sugar to a boil and set aside.
- Mix flour, baking powder, salt and remaining sugar into a bowl.
- Combine the melted butter, milk and almond extract.  Pour over flour mixture and stir until
mixed being careful not to over stir.
- Pour batter into prepared baking dish. Drop cherries onto the batter.
- Pour juice over batter and cherries.
- Bake for 1 hour or until golden brown.  Serve warm with ice cream if desired.

With the house smelling of baking cobbler, I thought it would be fun to design a recipe card to write my cherry cobbler recipe on and here is my card!

If you would like to use one of my blank recipe cards, please visit my shop at Blueberry Suite on Etsy.  You can print the recipe card as many times as you need.  I even included a gift tag if you would like to share your own recipes on these cards and give as gifts.

Thanks for visiting and I hope that you get a chance to make this wonderful cobbler!

Kathy
